Is there an email list I can sign up for that lets me know when there are new changes to the API, eg. backwards incompatible ones?

You should be able to sign up for email notifications from your Developer Dashboard by going to Account → Settings. By default the email address you signed up to Square with should be added already, but you can add additional email addresses if you’d like
