I have opened up a sandbox account today. Is it possible to load a sandbox with one or more of the restaurant’s redacted data? I would like to test various search on different types of payments and orders. Loaded sandbox will really help to expedite our testing. It will be OK to redact any order or payment data in sandbox.

Unfortunately there is no way to load your sandbox dashboard with data, other than manually creating it via the dashboard or via the APIs. Certain things (like items) may be exported and imported into sandbox, but you may run into issues if there’s modifiers/taxes etc, and the import could fail.
